摘要
    通过对汕头地区白壳蛋鸡和褐壳蛋鸡生产性能、白壳鸡蛋和褐壳鸡蛋物理性质、白壳鸡蛋和褐壳鸡蛋售出率的比较等，综合分析研究适合汕头地区的蛋鸡品种及其经济效益。结果表明白壳蛋鸡与褐壳蛋鸡相比，白壳蛋鸡料蛋比低，适合汕头地区规模化生产；市场上消费者对两种鸡蛋的消费取向不同，消费者多偏向于购买白壳鸡蛋。在汕头地区，蛋鸡场应该以白壳蛋鸡为主要蛋鸡品种，结合褐壳蛋鸡作为市场补充和调节。

Abstract
      The difference of production performance, the physical properties, the sold rate and the total benefit between white shell layer and brown shell layer in Shantou area were compared. The results showed that the feed conversion rate of white shell layer was lower than that of brown shell layer. The white shell layer was more suitable for large-scale production in Shantou. The consumer had a preference for eggs with white shell to one with brown shell. Therefore, the white shell layer should be fed as main variety, and the brown shell layer could be the complement and regulation of the egg market in Shantou.

1 前言
     据联合国粮农组织（Food and Agriculture Organization of the United Nations，FAO）统计资料，我国鸡蛋产量从1990年的656万吨增加到2007年的2730万吨，鸡蛋产量净增2074万吨[1]。目前我国鸡蛋产量的年增长速度和总产量都位居世界首位[2]。而鸡蛋含有丰富的优质蛋白，其中蛋氨酸含量特别丰富[3]，所以鸡蛋深受广大人民群众的欢迎。随着国外引进的蛋鸡品种的增加，不同颜色的鸡蛋，如白壳鸡蛋、褐壳鸡蛋、粉壳鸡蛋和绿壳鸡蛋也逐渐大量流入国内消费市场，这使得广大市民在鸡蛋的选购上有更多的选择空间。
